One of the many things I love about the Washington, D.C. dining scene is the mix of old and new. Although it seems like there's an opening every other week, there are classic D.C. institutions that have stood the test of time.

One of these is 1789 Restaurant. Located in Georgetown, the restaurant has been in operation since 1960. I had the opportunity to go behind the scenes and meet Executive Chef Kyoo Eom. A native of South Korea, Chef Eom has worked at many celebrated restaurants across the country.

Although the menu is focused on classic French techniques, he finds ways to inject Asian flavors into the dishes. Hope you enjoy the interview and the tour of 1789!
